Ingredients
- 1 large purple brinjal (peeled, sliced)
- 2–3 tbsp oil (for shallow frying)
- ¼ cup roasted groundnuts
- 1 onion, cubed
- 1–2 green chillies
- 2 garlic cloves or ½ tsp garlic paste (optional)
- A handful of coriander leaves
- ½ tsp cumin powder
- ¼ tsp garam masala
- Salt to taste
- 2 tbsp lemon juice
- 1 tsp oil
- 2–3 tbsp water
Instructions
Step 1: Peel and slice brinjal, then shallow-fry in oil until soft and charred. Set aside to cool.
Step 2: In a mixer jar, add roasted groundnuts, green chillies, garlic (optional), onion, coriander, cumin, garam masala, salt, lemon juice, oil, and water.
Step 3: Grind everything to a coarse paste.
Step 4: Shred or mash the cooled brinjal.
Step 5: Mix the ground paste into the shredded brinjal and combine well.
Step 6: Serve immediately with rice or roti.
